Simple, filling snacks best for Super Bowl party

The Super Bowl is synonymous with intense rivalries, memorable half-time shows, commercials people actually want to watch and parties. And no Super Bowl party is complete without good food.

While Super Bowl food should be taken seriously, there are no fancy four-course meals served at these parties. Local chefs say simple and filling snacks are the easiest way to feed fans without missing a single play.

We talked to local restaurants who gave us a few recipes for those in need of some inspiration.

Grilling out is a great way to feed your guests, said Steve Williams, owner of Steve's Cafe Americain/Tapas 12 West. He suggests chicken and beef skewers as an easy but filling snack. Hamburgers and hot dogs are also simple to make, he said.

Instead of plain tortilla chips and cheese, Williams likes to spice up his nachos by adding diced tomatoes and seasoned black beans.

And you have to have dessert, he adds. Brownies and cookies are his suggestions. Some of his favorites are chocolate chip, oatmeal and peanut butter.

Add some Asian flavor to your All-American get-together with fried won tons, a suggestion from Cam Le, manager of Chop Stix Cafe.

It requires cream cheese, white onions and egg paper, which you can get at most grocery stores, Le said, although the onions are optional.

Chop a small amount of onions and mix them with the cream cheese. Use fingers to fill the egg paper with the cream cheese filling.

To fry them, put them in hot oil for three minutes. If you don't have a fryer or are afraid all that oil will ruin your New Year's diet, bake them at 140 to 200 degrees for 20 minutes.

Another low-calorie alternative, use low-fat cream cheese, Le recommended.

Instead of buying a tub of guacamole, try making it yourself. Guacamole is a great dip with chips or veggies and is nutritious, said Patty Stockwell, owner of El Toro Mexican Restaurant, who gave her restaurant's recipe for guacamole.

You will need 15 ripe avocados, 6 ounces of El Toro salsa (made fresh daily), 1 teaspoon of granulated garlic and 1 teaspoon seasoning salt. Use Hass avocados to make guacamole, Stockwell suggested. While Florida avocados are good to eat, they are high in water content and don't make for the best guacamole, she said.

Cut the avocados in half, remove the pit and put the pulp in a large container. Add the rest of the ingredients and blend with a potato masher until smooth. Serve with chips.

This recipe serves 30 to 40 people, so cut it in half if less is needed.

When storing guacamole, cover it with plastic wrap, push it down and seal it in an airtight container. This keeps it fresh longer and prevents most of the oxidation, Stockwell said.

And for the vegan football fans, Christain Ahrens, an employee at Book Lover's Cafe, offers a simple, alternative recipe for nachos made with just two ingredients: cheese and beans.

The cheese is one part nutritional yeast to one part flour to one part water. Mix and heat on a stove. Add 1 tablespoon of garlic powder and 1 tablespoon of wet mustard.

Cook red beans with walnuts and green onions. Add a teaspoon of paprika and garlic powder. Once heated, pour beans over chips and serve.


15 ripe Hass avocados

6 ounces of El Toro salsa, or your favorite store-brand salsa

1 teaspoon granulated garlic

1 teaspoon seasoning salt

Cut avocados in half, remove the pit and put in bowl. Add all other ingredients and blend with a potato masher until smooth. Serve with chips.

Fried Won Tons

1 package softened cream cheese

white onions, chopped

egg paper

Chop onions and mix them into cream cheese. Use fingers to fill the egg papers with cream cheese. Pinch corners of paper together to seal.

Fry in hot oil for three minutes, or bake at 140 to 200 degrees for 20 minutes.
